Sautéed beef with broccoli
INGREDIENTS
2 tablespoons of oyster sauce
1 teaspoon chilli sauce and garlic
1/3 cup + 2 tbsp. to water tab
4 garlic cloves, finely chopped
1 egg yolk
2 teaspoons cornstarch
1 side steak cut into strips (about 1 lb / 500 g)
1 tablespoon of vegetable oil
1 onion cut into thin slices
4 oz. Shiitake mushrooms, tails removed and sliced
6 cups of small broccoli bouquets
1 red pepper cut into thin slices
salt and pepper
PREPARATION
1. In a small bowl, whisk together the oyster sauce, chilli pepper sauce and 1/3 t (80 ml) water. Salt, pepper and reserve. In a shallow dish, combine garlic, egg yolk and cornstarch. Salt and pepper. Add the steak strips and turn them over to coat them.
2. In large skillet or wok, heat 2 tbsp. (10 ml) oil over medium-high heat. Add the steak mixture and cook, stirring, for 3 minutes or until the meat is golden brown. Put the steak on a plate and set aside.
3. In the skillet, heat remaining oil over medium-high heat. Add onion and mushrooms, and cook, stirring, for 4 minutes or until softened. Add broccoli, red pepper and remaining water, and cook, stirring, for 6 minutes. Return the reserved steak with its cooking juices to the skillet, add the reserved sauce mixture, and cook, stirring, for 1 minute or until the sauce has slightly thickened.
A good thing
The secret of a successful sauté: coat the strips of meat with egg yolk and cornstarch. These will be all the more mellow!
