Baked chicken skewers with peanut sauce
INGREDIENTS
1 lb boneless chicken thighs, cut into 1 "(2.5 cm) cubes
1 lime
1/4 cup creamy peanut butter
2 tablespoons of hoisin sauce
1 tablespoon fresh ginger, finely grated
1/4 cup of hot water
salt and pepper
PREPARATION
1. Season the chicken cubes with salt and pepper, then thread onto metal or wooden skewers previously soaked in water. Place the chicken skewers on a baking sheet lined with lightly oiled aluminum foil. Bake under the preheated oven grill for 6 minutes or until the chicken has lost its pink hue inside (turn the skewers halfway through cooking).
2. Meanwhile, grate the lime to obtain 1 tbsp. teaspoon (5 mL) zest, then squeeze to 1 tsp. to tab (15 ml) of juice. In a small bowl, using a whisk, mix peanut butter, hoisin sauce, ginger, zest and lime juice, and water. Serve the chicken skewers with the sauce.
